  • For the dressing
  • 1/2 cup olive oil
  • 1/4 cup white wine vinegar
  • 2 tablespoons diced shallots
  • Salt & Pepper

Once summer hits one of my favorite things is to add fruit to my salads. This salad was inspired by a salad that Panera Bread was featuring last summer.

Prepare the walnuts but blanching them in boiling water for 2 minutes. Drain and dust with powdered sugar and a sprinkle of salt. Bak at 350 for 10 minutes.

In a large bowl, combine the mixed greens, walnuts, berries and feta. For the dressing, combine the olive oil, white wine vinegar, shallots and salt & pepper. Stir to combine and then drizzle over the salad mixture. Toss the salad and serve immediately.
