Well, it’s Monday. Again. I can never seem to slow my weekends enough to feel like I actually had a weekend. I was able to spend this weekend on a little ‘cheese-cation’ with a group sponsored by the Wisconsin Milk Marketing Board. We toured, we ate, we ate some more. But more about that later this week.

I was still in a dairy mindset yesterday so I thought I’d whip up some dip to go along with my veggies. This Sour Cream & Onion Dip is super quick and easy and the best part is that it’s low in calories. This dip is great for an afternoon snack or a good dip for your next party. I tried it out with some vegetables and also pita chips and both were delicious.

Heat a small skillet over medium heat and add in the oil. Swirl the pan with the oil to coat and then add in the onion, garlic and 1/8 teaspoon of salt. Continue to saute the onions for 5-6 minutes until they begin to cook down and are translucent. Cool the onion mixture while you prepare the base for the dip.

In a medium bowl combine the sour cream, mayonnaise, 1 1/2 tablespoons of chives, pepper and remaining salt. Stir the ingredients well to combine. Add in the onion mixture and continue to stir, seasoning with additional salt and pepper as desired. I’m also big on garlic so I sprinkled with additional garlic powder. Top with the remaining chives and serve. Dip. Eat. Repeat.

Ingredients
  • 1 tsp canola oil
  • 2 cups chopped sweet yellow onion
  • 1 tblsp minced fresh garlic
  • ¼ tsp salt, divided
  • 1 cup reduced-fat sour cream
  • ½ cup canola mayonnaise
  • 2 tblsp minced fresh chives, divided
  • ¼ tsp ground white pepper
Instructions
