First of all, this bread, unlike all other types of bread, does not contain flour with poor biological value. Instead, its preparation consists of germinating wheat grains, and no additives or similar substances are added. You need a minimal amount of yeast and salt, however.
Undoubtedly, it is no less nutritious as than all other bakery products, and moreover, it contains high amounts of protein, vitamins, amino acids, fats, carbohydrates and minerals. What’s more, its content of nutritive fiber is twenty times higher than the one in the white-flour bread.

This is due to the fact that its consumption prevents diabetes, arteriosclerosis and cellulite, stimulates the production of red blood cells and hemoglobin, eases the elimination of carcinogenic and toxic substances from the body, and excess cholesterol.
- 300 g(10.5 oz) of wheat
- 2 tablespoons of flax seed
- 2 tablespoons sunflower seeds
- 100 g(3.5 0z) of barley flakes
- 2 tablespoons sesame seeds
- 1/2 yeast + 50 ml of water
- 1 teaspoon salt
Method of preparation:
Note that the preparation of this bread can be a bit time- consuming, but it’s extremely easy in return.
Initially, pour water on wheat and leave the wheat thus for three days in order to germinate. Change the water occasionally for the grain not to spoil.
After this period, strain the wheat and mix it in a blender, until you get a mass similar to dough. Pour lukewarm water over the barley flakes to soften, and then add them to it.
In a dry frying pan, gently fry the sunflower seeds, linseed and sesame seeds, and then add them to the mixture.
In 50 ml of water, stir in half the fresh yeast with a spoon of sugar. When it grows a little, add it to the mixture and knead bread hands.
You will not need to add water to it.
Add a teaspoon of salt, mix the ingredients in order the mixture to become homogeneous, and leave it to stand for at least 30 minutes.
Now, preheat the oven to 220 Celsius (428 Fahrenheit) degrees and add a couple of ice cubes in the oven before baking the bread.
This will produce steam and the bread will rise a little more. Then, bake the bread for 45-50 minutes.
