  • 1 cup breadcrumbs

  • 1 large onion
  • 3 cloves ground garlic
  • 3/4 cup chopped parsley
  • 3-4 eggs according to texture
  • salt & pepper to taste

One of my favorite recipes taken from my grandmas cookbook is that of her meatballs. I remember as a kid going to her house every Sunday for lunch and it would usually be meatballs with ravioli or gnocchi. While this isnt the healthiest of recipes I figured I would share it with everyone because it is so delicious!

Ok, I know what youre thinking. Raisins?! YES. These add moisture to your meatballs. I put the raisins in a food processor with a little bit of water and grind them up really, really good.

Put all of the ingredients into a bowl, adding only 3 eggs to start. Mix well with your hands (yes, its messy) and add a fourth egg if you feel it is too dry. Ive found that browning these in the oven is the least messy so I form my meatballs to the size of my liking and then set them on a cookie sheet. Once the meatballs brown and seem firm enough, I put them into my sauce to simmer and finish cooking. I wouldnt leave them to cook for more than an hour, otherwise youre going to end up with a mushy meat sauce. And there you have it!
