So I have a story. I travel frequently for my full-time job and one of the things I have found is that if I leave without setting up a meal plan for my boyfriend he typically will either 1) eat a combination of candy and frozen pizza or 2) get McDonalds. Monterey Gourmet Foods had just sent me some delicious tortellini, vodka sauce and ravioli to try right before a recent trip of mine. I had the perfect idea of the tortellini and vodka sauce that I planned to cook up when I got home. And then I got a text…it was a photo text of my tortellini, in a bowl, covered in the vodka sauce. First of all, I couldnt believe that he actually cooked for himself but more important I had to call and scold him for eating my samples! Luckily I still had the ravioli to sample for myself. At least his review of these products was glowing!

Fast forward to Wednesday night. This is usually a busy night for me and I dont get home until late so I figured it would be a good time for a quick meal. My point here is that these products are gourmet, delicious and super quick to prepare. The best part is that they are made with all natural ingredients and are filled with nothing but goodness.

So heres what I whipped up: I used the Chicken & Artichoke ravioli and cooked it according to the package instructions. I also had some sun-dried tomato pesto in my pantry, so I drizzled the cooked ravioli with a bit of olive oil and then topped each puff with some of the pesto. Sprinkle a bit of fresh Parmigiano-Reggiano and you have yourself a quick meal!
