- 2 tblsp Greek yogurt
- 2 tblsp reduced-sodium soy sauce
- 2 tblsp smooth peanut butter
- 1 tblsp sesame oil
- 1 tblsp unseasoned rice vinegar
- 1 tsp grated fresh ginger
- 1 tsp chile sauce
- 8 ounces Al Dente Spicy Sesame Linguine
- 2 scallions, trimmed and thinly sliced
- 1/2 small red bell pepper, seeded and thinly sliced
- 1/2 cup shredded carrots
- 1 cup shredded nappa cabbage
- Toasted sesame seeds, for garnish
It’s another lovely day in the neighborhood and while you’re reading this, I’m mid-air on a flight to Boston. Onto today’s post…;I mentioned last week that I had a foodie/fitness blogger event to attend with some local Milwaukee bloggers. It was a great opportunity to meet with some new friends who share the same passions and my lightened key lime pie cups were a real hit! Sun, who is behind the blog Eat. Host. Run. Style., brought a delicious cold noodle salad that I instantly fell in love with. Al Dente Pasta Company had recently sent me some pasta to try, including their Spicy Sesame Linguine and now I knew exactly what I was going to do with it! I think you’ll fall in love with this dish just like I did. And be sure to read through today’s post because there’s a giveaway at the end!
Boil a large pot of water with 6 quarts of water and a dash of salt. Cook the noodles according to the package instructions.
In a small bowl, whisk together the yogurt, peanut butter, soy sauce, sesame oil, vinegar, ginger and chili sauce. I used Sriracha as my chili sauce and you can add as much or as little as you’d like depending on how much heat you’d like your noodles to have. I also have to note here that I am a huge fan of the taste and smell of sesame oil, in case you were wondering.
In a large bowl mix together the peppers, carrots, cabbage and green onion. Add in the cooked noodles and toss together. Slowly drizzle the sauce over the noodles and gently toss to coat. Sprinkle the top of the noodles with sesame seeds and serve. Healthy and delicious!
